VIETNAMESE PHIN BREWING METHOD — BARISTA BLAGU STYLE
The Vietnamese Phin Method – Barista Blagu Style
"Each drop of coffee, rich and flavorful, falls into the cup like fragments of old memories returning."

Introducing the Traditional Phin
The Vietnamese Phin is one of the most ancient and distinctive brewing methods in Vietnam. This humble tool has witnessed the nation's history—from the quiet corners of Saigon's alleys to the bustling energy of Hanoi's streets—shaping a unique and contemplative coffee culture.
Phin coffee captures the pure essence of Vietnamese coffee: bold, robust, and aromatically intense. Whether you're sitting beside a peaceful street or watching busy traffic flow by, observing each drop slowly pass through the tiny holes of the metal Phin creates an almost meditative experience.
Process Overview
The Vietnamese Phin brews coffee through a slow-drip metal filter, allowing water to gradually pass through finely ground coffee. This unhurried process yields a full-bodied, bold flavor with complex aromatic layers—simple yet soulful.
This is not merely brewing; it is a quiet ritual, carrying within it the rhythm of Vietnamese life in every single drop.
What You'll Need
- Vietnamese Phin filter (Quality matters: fine mesh and evenly punched holes ensure smooth extraction with minimal sediment.)

Step-by-Step Brewing
Step 1: Weigh and Grind
For Phin brewing, choose dark-roasted coffee or a Robusta-Arabica blend to achieve that characteristic bold, balanced flavor.
Weigh out 25g of coffee and grind to a fine-medium consistency.
Step 2: Prepare Water, Rinse the Phin, and Add Coffee
Use water heated to 95–98°C (203–208°F). For 25g of coffee, prepare approximately 175ml of water.
Rinse the Phin with hot water before brewing—this warms the metal, stabilizes temperature, and helps preserve the coffee's aromatic oils.
Remove the inner filter press (the perforated lid), then add your ground coffee. Gently tap the Phin chamber to create an even, level coffee bed.
Step 3: Brewing with the Vietnamese Phin
Place the filter press gently on top of the coffee bed.
Begin by pouring about 30ml of hot water to allow the coffee to bloom, then cover the Phin lid and wait 45 seconds.
After the bloom, pour approximately 100ml of hot water, cover again, and wait for the coffee to begin dripping.
Finally, add the remaining water to reach 175ml total, and cover once more. Allow the coffee to drip slowly into your cup.
Step 4: Serve and Savor
Embrace the quiet moment as each drop falls into your cup—slow, steady, and fragrant.
Barista Blagu recommends trying your Phin black and pure—no sugar, no milk, no ice—to experience the unadulterated flavor in its most powerful, awakening form.
However, feel free to add ice, sugar, or condensed milk according to your preference, creating your own personal version of Vietnamese coffee.
Closing Thoughts
The Vietnamese Phin is a silent storyteller—each drop of coffee reflects warmth, nostalgia, and soul. It is the art of slowing down, of savoring not just the flavor but the present moment itself. At Blagu, we honor this timeless ritual—where simplicity becomes serenity, and every drop carries a memory.
