Chemex is not just another pour-over method — it is a work of art in itself.

With its elegant one-piece design, a creation of a German chemist in 1941, accented by wood and leather details, the Chemex has become an icon of design and coffee craftsmanship.

Its timeless form is featured in the permanent collections of the Museum of Modern Art (MoMA) and the Brooklyn Museum, celebrated as both beautiful and functional.

Coffee brewed in a Chemex is for the perfectionist — for those who pursue purity in every drop. The special Chemex paper filter removes most oils and bitterness, leaving only the cleanest, most delicate flavors. Each note shines brightly, creating a light, silky cup that embodies refinement.

Process Overview

The Chemex brewing method produces a clean, smooth, and refined cup by combining scientific precision and minimalistic elegance. Every pour reveals clarity — a balance of aroma and transparency, where simplicity becomes sophistication. To brew with Chemex is to pause and let both water and time unfold gracefully.

What You’ll Need

  • Chemex coffee maker

  • Gooseneck kettle

  • Chemex paper filter (the special filter designed for this brewer)

  • Digital scale

  • Your favorite coffee beans

Barista Blagu’s Chemex Ratio: 1:15

Step 1: Weigh and Grind the Coffee

Coffee for Chemex should ideally be light roast or light-medium roast for better flavor clarity.

If you prefer a stronger cup, you may use medium roast.

Weigh 20 g of coffee and grind to a medium consistency.

Step 2: Fold the Filter and Prepare Water

Open the Chemex filter and place it into the neck of the brewer.

Make sure the folded edge aligns with the pour spout, so it doesn’t block airflow while pouring.

The ideal water temperature for brewing is 87–93°C.

Step 3: Rinse the Filter and Preheat the Chemex

With the filter in place, slowly pour hot water through it until the paper is fully saturated.

Swirl the Chemex to warm the glass — this keeps the coffee hot longer and helps preserve its aroma.

Then, discard the rinse water before brewing.

Step 4: Brewing with the Chemex

Add the ground coffee into the filter and gently shake to level the surface.

Start pouring slowly in a circular motion, from the center outward.

Pour about 30 ml of water first to let the coffee bloom and release gas — wait for 45 seconds.

Continue to pour the remaining water in slow, spiral motions until you reach 300 ml in total.

Tip: The speed of your pour affects the taste — a slower pour yields a richer, heavier body; a faster pour gives a lighter, brighter cup.

The ideal total brewing time is 2 minutes to 2 minutes 30 seconds.

When finished, remove the paper filter and discard it.

Step 5: Serve and Enjoy

Gently swirl your Chemex and pour into your favorite cup.
